MOMO
From 2012 to 2013, I designed and built a mobile oven from scratch. This project comes after many years of building ovens and incorporates bread and pizza baking into a social practice I have established. MOMO now travels to all sorts of events across southern California.
FIRST BAKE WITH LOS ANGELES BREAD BAKERS
Firing done and the coals out. Mark Stambler and other members from the Los Angeles Bread Bakers showed up for the maiden voyage. Many people from the neighborhood stopped by and tried bread and hung out for the baking. Very fun…lots to learn…oven was wicked hot. Long elongated loaves became round boules from the intense oven spring. The flap doors in combination with the damper worked great to keep the steam in the oven. I was beginning to wonder if the oven was too small, until I baked and then realized that it was huge. Four days after the coals came out of the oven at 300 degrees…amazing!!
